Thank you, the key point is that you have to be logged in under the account in question. On my phone you have to do: Settings / Google / Google Account / Data and Personalization / Delete a service or your account / Delete your account.

I have Android 8.1.0, it’s supposedly Oreo but I don’t have this interface, I have this one and there is no Users and Accounts section (there is a Google section but no accounts in it):
Users and accounts there must be on your smartphone, check from the search bar, that’s what I do when I’m on Huawei, because it also amuses them to change the name of the categories, if not in your additional settings.

The Mi account is used to save data from the phone in the Cloud, not related to Google accounts apparently.
You can immediately remove access to your Google on your smartphone, it’s already a first step at Settings > Google > Google Account > Security > Device > Remove access.
On my side I will try to find a XIAOMI to see a little clear in your parameters.

So, I took my Note 6 out of its box (I bought it recently and it’s not my everyday phone yet…)
Settings > Sync > Other : Google
Menu (…) Further down > Delete account.
This does not delete the account, it removes it from the phone’s configuration.
